The standard flow for editing a booking page is a loop: change a field, save, find the public URL, refresh it, notice the intro is two words too long, go back. Ten edits is forty tab switches, and somewhere in there you stop polishing and just publish whatever.

Is the preview a simulation?
No — that's the point. The preview pane loads your actual page, built the same way visitors get it, in a draft-only mode gated to you. What you see is what publishes.
Does it show unpublished changes?
Yes. The preview renders your draft state while the public URL keeps serving the published version. Publish when the draft looks right.
What width does it preview at?
Phone-width first, because that's where booking links get opened. Your page is built mobile-first, and the preview keeps you honest about it.
Do I still need to check the live page?
A final scroll on your own phone never hurts, but the preview is the same code path — not a lookalike — so there are no surprises waiting after publish.
