Yes. Set a price on the session type and Stripe Checkout collects it at booking. Money settles to your own Stripe account, refunds follow the cancellation policy you choose, and the platform fee is 0%.

Does Buildout Schedule handle group fitness classes?

Not yet. Every slot books one person today; there is no class-capacity option. Session times can share one weekly page, and 1-on-1 training, assessments, and consults are where it is strongest. If per-class headcounts are the first thing you need, a class-management tool is the right pick today.
